It's that time of the year again. The new school year is quickly approaching and with that comes new school supplies and agendas. Now choosing an agenda for the year is very serious business. I mean you are going to be stuck with it for the rest of the year so you better choose wisely and there are lots of things to take into consideration from the layout on the inside to the how cute the cover is. And let me tell you, the struggle is real this year. Like I thought last year was hard, but more & more companies keep coming out with the cutest planners. All I know is that there is a very high chance that this year will be the year I stray away from my trusty Lilly agendas and try something new, shocker I know. As far as what I will be trying, who knows.

Funfetti Cupcakes!

NEWFLASH: I made Funfetti Cupcakes and boy are they fun and full of 'fete!

I was super annoyed when I started making these because right before I started the lighting was perfect for taking pictures and then literally the second I started it clouded over and stormed during the whole time.

I decided to make these on a whim. I haven't made any cupcakes for awhile and felt like it was time to make some cupcakes!

I actually made these cupcakes from scratch, which is something I rarely do for cake! I am not a seasoned cake baker at all, I do not know the in's and out's of baking a cake. Usually my mom and I swear by the foolproof method of boxed cake mix with homemade frosting. The homemade frosting is the key to making people think it's all made from scratch and boxed cake mix typically will consistently give you the perfect moist and fluffy cake no matter your baking skill.
Every once in awhile I decide to be ambitious and dabble in trying to make cake from scratch, which then sends me running back to the boxed cake mix. I wish I could say this adventure was a success, but I don't think I'm completely sold on the cake from scratch thing yet.

I used this recipe here and while it was fun, this recipe did not go without it's blunders. What the pictures don't show you is that first I was a bit overzealous with the sprinkles, thus while the cakes are colorful the once deliciously buttery yellow cake tastes a bit sprinkle-y. Also, I the cupcake cake cases I was using were a bit taller than typical ones so I ended up making slightly larger cupcakes than I intended. Last and most annoyingly, a lot of my cakes ended up falling. With my limited knowledge on cake baking I have not a clue as to why. The only thing I can think of is maybe I pulled them out like a minute early maybe I didn't beat the batter enough... I have no clue, which all of them actually fell a little to some extent just some much more than others.

For the frosting I did make the buttercream from the video, which I actually added some yellow food coloring to because I thought it would be cute! But because I am a chocolate fan I also made some chocolate frosting and this is the recipe I swear by! I also chose to use a spatula instead of a piping bag because I just really like the rustic look it gives the cupcakes!

But if you try this recipe out! I hope it works out a lot better for you!

Summer '16 Playlist

I love Spotify. I listen to so much music that a Spotify subscription is 100% worth it. While I often take advantage of Spotify's playlists, I also frequently like to make my own. I haven't made a playlist in ages and it feels good to have finally made one full of songs I love.

I am quite chuffed (quite a British thing to say lol) with my current Spotify playlist so I wanted to share it! I'm not going to list off the whole playlist here, as it is currently 1 hour and 45 minutes long. But, if you would like to see the whole playlist just click here.

As far as my taste in music goes, I love unique voices, more complex sounding melodies, and a good beat. Although, with that being said I do kind of listen to a bit of everything depending on my mood.

Something I love is hearing about people's favorites, not really any specific favorite but just in general. I don't know why favorites are so appealing to me, but they just are. I think favorites help you really get to know a person and see what they like no matter how big or small that favorite is.

Avocado Toast

Yes, I am going to be basic and make a post about avocado toast because I love it.

If you haven't heard of avocado toast, I don't know what rock you've been living under, because it is seriously all over the internet right now. And if you have yet to try it, you must! I do admit when I first started hearing about avocado toast craze I was a bit skeptical, how is some avocado on toast that amazing? To answer that, I honestly don't know it just is. You'll understand once you give it go.

So I wanted to share how I make my avocado toast, which it's super simple.

I am quite a traditionalist with my food, not to say I am a picky eater because I'm not. But, I just really appreciate simplistic food with quality ingredients. For the most part I'm not into super fancy complicated dishes. With that being said here is my delicious avocado toast!
slice of bread
sea salt
crush red pepper flakes

1. Toast your bread.

2. Slice and scoop about half the avocado into the bowl and add a generous squeeze of lemon juice. Then mash the avocado and lemon juice around a bit, not too much though. I like my avocado to be a bit on the chunkier side.

3. Spread your avo mash all over the bread.

4. Top with a sprinkle of sea salt and a pinch of red pepper flakes.

5. Enjoy!

Stay Hydrated!!

This summer I have been struggling a lot with drinking water. I have not been drinking enough water, thus leaving me exhausted and with headaches by the end of the day. By that point it's too late, I notice when I chug a bunch of water all at once it just goes straight through me and in order to stay fully hydrated I need to be drinking consistently throughout the day.

 I don't know what it is but I just forget about it and water hasn't been sounding that appealing, but it is especially important right now when it's 90 degrees and muggy outside! Anyways, in order to encourage myself to drink more water I have been considering investing in a new water bottle and there are so many cute ones on the market right now! For drinking water I actually prefer water bottles over tumblers just because you can toss them in your bag or anywhere and you don't have to worry about spillage.

So if you're struggling to drink water too, here are some cute water bottles that might encourage to drink some H2O!

I totally meant to have a post written and scheduled to post this morning. I was going to work on one last night after work, but to be honest between waking up at 7am to work out and working late I was exhausted when I got home. So, I am writing one this morning to share!
